Oyster-farmer from father to son, Damien is passionate about his work. His oysters, bred between Noirmoutier and Beauvoir-sur-Mer, are renowned for their iodised flavour.
They feed on plankton from the bay. The oysters are enriched with nutrients from the sea over a period of months until they produce a quality product. This is where they acquire all their flavour characteristics.
Come and meet him at his "cabane" and visit his establishment, where he will tell you all about his love for his profession. You'll also be able to taste his oysters and shellfish.
