Proud of its many local specialities, Le Glajou was an obvious choice for the CUISINE MONTOISE logo thanks to these traditional recipes from the marshes:
- Frogs’ legs with chopped parsley and garlic
- Eel grilled over vine shoots and eel fried in garlic butter
- Flan maraîchin (typical dessert)
Chef Alexandre Caetano has added pork cheek and chorizo to the recipe for cuttlefish ragout that he was given by Jeanine and Simone, two local women, in 2014. This recipe got the FANTAISIE GOURMANDE logo.
